Good article in the current issue of Time Magazine: Kitchen Gods

“Thirty years ago, most people who worked in restaurant kitchens had either just gotten out of the Army or were on their way to jail,” says Batali. “Now you get all these people who went to college, then found their passion in cooking. The level is suddenly much higher because the people cooking are a lot smarter.”

Food industry history is charting a very exciting course. We shall see profiles of Kitchen Goddess in the near future.

Apparently the French Revolution (1789-1799) contributed more than just enlightenment and inalienable rights to our current state of well being. The fallen aristocrats could no longer employ domestic staff and the amazing cooking talent began setting up shop on their own. Restaurants saw an exponential growth and people started to dine at outside establishments. In this regard, “let them eat cake” wasn’t all that special of a remark. I say a quote that better captures the legacy of the French Revolution to be, “let them eat out.”
